The Easiest Garlic Parmesan Roasted Asparagus

About This Cheesy Roasted Asparagus

Roasting asparagus is one of the best ways to prepare asparagus in my opinion and one of the only ways I can get picky eaters in my family to eat it. The roasting process helps crisp up and caramelize the asparagus and the olive oil, garlic and Parmesan give it all that delicious flavor.

Although you may think of asparagus as a Spring vegetable, this side dish is perfect for the holidays and all year. It takes minutes to make and it looks impressive. You can also make this into a ravioli and asparagus pasta for a quick complete meal.

What You Will Need

Ingredients for garlic parmesan roasted asparagus.

This roasted asparagus has very few ingredients. Here is what you will need (full recipe below):

  • Fresh asparagus. You will need fresh asparagus for this recipe. Canned asparagus or frozen will not hold up to the roasting process.
  • Parmesan Cheese. Try to find the real deal, Parmigiano Reggiano. You can also use cheddar or any good melting cheese if you prefer. I make this cheesy asparagus with whatever I have on hand.
  • Garlic Powder. I prefer working with garlic powder when roasting vegetables because I find that diced garlic just burns during the roasting process.
  • Kosher Salt. For flavor
  • Olive Oil.
  • Red pepper flakes (optional).

How To Make Garlic Parmesan Roasted Asparagus

  • Add the asparagus to a sheet pan: I like to keep things as simple as possible and add my asparagus to a sheet pan.
  • Drizzle Olive Oil: Once I do this I just use my hands and roll the asparagus back and forth on the sheet pan to make sure everything is incorporated evenly over the asparagus.
  • Add Seasoning: This is the garlic powder, red pepper flakes, and kosher salt.
  • Bake: You want to bake the asparagus in a preheated 375 degree oven without the cheese to roast it nicely.
  • Sprinkle on the Parmesan cheese: The cheese portion of this roasted asparagus recipe is added on during the last minute or so of cooking. Once you add the grated Parmesan to the roasted asparagus, it will melt really fast and add the most delicious outer layer of flavor to the asparagus.

  • Make cleanup easy: To make cleanup really easy, line your baking sheet with aluminum foil. When you are done, just discard the foil. You won't have to scrape off the melted cheese on the pan.
  • Use garlic powder: Garlic powder when mixed with olive oil holds up to the high heat of the roasting process much better than fresh garlic.
  • Grate your own Parmesan: When melting Parmesan, I always grate my own so I can ensure there is no powdery residue added to the cheese which is added when you buy pre=grated. That powder is an anti-caking agent that prevent the cheese from melting properly.

Storing

This cheesy asparagus makes great leftovers. To store, allow it to cool then place in an air-tight container in the fridge.

To reheat, just place the asparagus on a sheet pan in a 350-preheated oven for 5 minutes or until heated through.

The Easiest Garlic Parmesan Roasted Asparagus

Equipment

  • 1 sheet pan

Ingredients

  • 1 bunch of fresh asparagus cleaned and bottom inch cut and discarded
  • ½ cup Freshly grated Parmesan cheese
  • 2 tablespoon extra virgin olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon red pepper flakes optional. Will not be spicy

Instructions

  • Pre-heat your oven to 375 degrees
  • Grab a large sheet pan.
  • Add cleaned and trimmed asparagus to the sheet pan.
    1 bunch of fresh asparagus
  • Now drizzle olive oil over the asparagus.
    2 tablespoon extra virgin olive oil
  • Add red pepper flakes, garlic and salt.
    ½ teaspoon garlic powder, ¼ teaspoon red pepper flakes, ½ teaspoon kosher salt
  • With your hands, roll the asparagus back and forth on the sheet pan to get the asparagus nice and coated with the olive oil and spices.
  • Place in the pre-heated oven for 10-15 minutes or until the asparagus is starting to brown and crisp up at the edges.
  • Remove asparagus from the oven and sprinkle evenly with the Parmesan.
  • Place back in the oven for 1 minute to melt the Parmesan.
    ½ cup Freshly grated Parmesan cheese
  • After one minute, remove the asparagus from the oven and serve immediately.
